Bonus Post: Pizza Dough!

With my weight loss goals in mind, I’ve been turning myself into Ms. Betty Home-maker every night for dinner. I made this pizza dough tonight, and it was such a big hit, I wanted to share it with you!

Pixie’s Picture Perfect Pizza Pie …. Dough

Serves: 10

1 Tbsp active dry yeast     –     1 tsp sugar     –     2 c. hot water (105 ° – 115° F)
5 – 5½ c. all purpose flour     –     1 Tbsp Olive Oil     –     1 tsp salt

1- In large bowl, combine yeast and sugar. Add warm water, and let sit for 5 minutes. Stir in 2 cups of the flour, olive oil, and salt. Knead in remaining flour until dough is stiff, smooth, and elastic. This should take about 6-8 minutes. Shape the dough into a ball, place in greased bowl, and turn to cover the dough surface. Cover with a towel and let sit and rise for 40 minutes or until double in size.

2- Punch dough down. Turn dough out onto a lightly floured surface. Divide dough into 10 equal portions. Cover and let rest for 10 minutes. Roll out each dough portion into a 7-inch round.  Makes 2½ pounds of dough.

(For electric stand mixer: In a small bowl, combine yeast and sugar. Pour warm water overall. Let stand 5 minutes. Place yeast mixture in large mixing bowl fitted with dough hook. Add 2 cups of flour, olive oil, and salt. Mix on low speed until soft dough forms. Beat 3 mintues more. Slowly add 3-1/3 to 4 cups additional flour. Continue to knead, on low speed, for 5 to 6 minutes more or until dough feels smooth and elastic (dough will be sticky). Transfer to to well-floured surface and shape into a ball. Let rise and shape as above.)

These dough pies are perfect to freeze. Just roll out and place on wax or parchment paper. To thaw, just pull it out and let it sit at room temperature for 30 mins.
